I know lots of folks celebrate with a big holiday dinner, but in my house, we always have a brunch. After getting up early to great the sun, we slide on into the day with a festive nosh. I wanted to share some of my favorite GF celebration brunch ideas.


Orange Almond Biscotti
2 tsp butter                                              1/3 C sugar                           1 tsp almond extract                       
1/2  tsp vanilla extract                            1 egg plus 1 egg white        1 3/4 C Pamela's Baking/Pancake Mix
1/2 C sliced almonds                            Zest from one orange
Preheat oven to 300. Cream together butter and sugar, then beat in extracts with the egg and egg white. Add Pamela's Baking & Pancake Mix with almonds and combine. On a greased cookie sheet, form a log 3-inch wide log the length of the cookie sheet. Make sure log is about 2-inches from the edge of the pan, as dough will spread when baking. Bake in a preheated 325° oven for 35 minutes. Remove the biscotti and turn down oven to 300°. When loaf is cool, slice in 1/2-inch slices with a serrated knife. Lay pieces on their sides and re-bake for 25-30 minutes in 300° oven.
Eggs Benedict
Mock Hollandaise
1 Cup Butter, Juice of 2 Lemons, 6 Egg Whites only
Melt butter in small sauce pan. Crack 6 eggs for the whites into bowl, then add juice of both lemons to egg-white mixture and whisk. Add to melted butter on low heat and stir until all three are blended and eggs are coagulated into butter and lemon juice. You can play with this recipe for desired tang.  It will not look like a smooth hollandaise, but will taste as good if not better.
Serve with Kinnikinnick GF English muffins, Applegate or Beelers bacon and a poached egg
You can lightly steam either Asparagus or broccoli spears to green up the meal

Bagel Bar
Kinnikinnick makes GFNY Style and cinnamon raisin bagel. Udis also makes a GF multi grain bagel.
Serve with: Echo Falls smoked salmon (the package does not say GF, but I verified it with the co) Veggies like tomato, red onion, spouts, cucumber.
Cream cheese/ Neufchatel: Nancy’s and Organic Valley. You can add honey, roasted red peppers, herbs an s spices top make different varieties of spreads.
NOG!
Both Silk nog (made of soy) and So Delicious Nog (made of coconut milk)
Rum is made with out the use of grains and generally does not contain gluten. Please contact the manufacturer to verify the GF status. Often it’s flavored rum and drink mixes that will get you into troble.
Garnish with a sprinkle of nutmeg and enjoy!
